Breakfast Burritos are a quick, satisfying breakfast loaded with protetin, carbohydrates and fat that get Scouts up and going. This one is a cross over from our Cub Scouts and a camp favorite.

Butter

Preparation

Prepare the vegetables according to the recipe.  To save time at camp, prepare the vegetables ahead of time and pack in reusable freezer bags.

  1. Over a Fire
    1. Heat a bed of coals that are still red
    2. Toast the tortillas over the coals with a grill grate
    3. Scramble the eggs in a bowl or mess kit
    4. Add the eggs to a cast iron skillet or a cooking pot with a tbsp of butter every 4 eggs – stir the eggs and butter together over the coals until just before they are totally dry
    5. Add the vegetables to the burrito
    6. Add the scrambled eggs and cheddar cheese
    7. Fold into a burrito and serve
  2.  Over a Camp Stove
    1. Toast the tortillas over a low flame – soften them
    2. Add the scrambled eggs and butter to a cooking pot and stir until soft and not fully cooked
    3. Remove from the heat
    4. Add vegetables to the burrito
    5. Cover in scrambled eggs and cheese
    6. Fold and serve
